Ice Box Cake


I have fond memories of making ice box cakes as a child, and coincidentally, so does the boy, but while I always made them with ginger snaps, he always made them with chocolate cookies. This time around we did it my way, but I must admit either variation is equally delicious. These simple treats are easy to make and relatively quick (except for the whole night in the fridge part), and the payoff is more than worth it. All you need to do is make, or buy if you prefer, whipped cream and layer it and the cookies, I like these the best, in a container and let them sit in the fridge overnight. And while I must admit that the boy thinks I’m totally crazy for doing this, I like to put mine in the freezer instead.
