This weekend I decided to make candied ginger dipped in super dark chocolate as a delicious and easy-peasy to make treat. By buying already candied ginger (make sure to get uncrystalized, or you’ll have to wipe off the extra sugar) all you really have to do is melt some chocolate and dip. In fact, it’s so easy that I did it while making breakfast one morning. Thanks to using dark chocolate, I used 81%, the results are not too sweet, but instead a perfect mix of chocolate and ginger spiciness and flavors. And of course I’ve convinced myself that since its exclusively ginger and dark chocolate, both of which are good for you, there’s really nothing wrong with having as many as I please.
