Blood Orange Upside-Down Cake


My love affair with blood oranges really blossomed when I studied abroad in Paris; I used to buy fresh squeezed blood orange juice instead of regular orange juice, and boy was it a delicious upgrade. To continue my love of blood orange desserts (remember the caramels, yum) I tried this recipe for a blood orange upside-down cake (I used Vegg to replace the eggs, and it worked amazingly). Because of the cornmeal, the whole cake takes on this rustic, homespun vibe, which is super satisfying to those comfort food cravings and better yet, the taste of the blood oranges really comes through.
