Candy Cane Cupcakes

For a holiday spin on an old-time favourite of mine, I decided to make peppermint candy cane cupcakes. I used my go-to vegan cupcake recipe, but added a teaspoon of peppermint extract to the batter, this cream cheese frosting recipe, but used half a teaspoon of vanilla and half of peppermint extract, and topped them off with crushed candy cane pieces. The cupcakes came out just as I’d imagined with a hint of peppermint, but nothing so overwhelming that you felt like you’d just popped a breath mint.
