Blackberry Buttercream

As my final treat, I decided to make a vegan vanilla cake, the same one I used here, with blackberry buttercream frosting. The recipe is as follows

8 oz blackberries
1 tablespoon water
1 cup butter
6 cups confectioners sugar

1 teaspoon vanilla
1/2 teaspoon almond extract
  1. Cook blackberries in a small saucepan over medium heat for 10 minutes or until they are easily broken up with a wooden spoon.
  2. Strain through a colander to remove the pits and then puree in a food processor.
  3. Set aside puree until cool, about 30 minutes.
  4. Beat butter on medium speed until fluffy
  5. Add 1 cup of sugar and beat until smooth.
  6. Add blackberry puree, vanilla, and almond extract.
  7. Slowly add remaining sugar, blending after each.
  8. Beat on medium high until light and fluffy.
