Thursday's Threes

This week has been exhilarating and tiring at the same time. As excited as I was to head on my first business trip, I'm equally happy to be home and ready to recoup. With the arrival of the four-day holiday weekend, I have plenty of festivities to attend - barbecues, fireworks, dinners - and I'm looking forward to it all. This week, the things bringing me joy were all awaiting my arrival home from the airport: a nicely made bed, the bag I ordered, and beautiful flowers from my boyfriend. Traveling this week has me longing for the simple things that I'm sure I'll fit in over the long weekend.

Eat, Drink, and Be Merry

This past weekend my best friend came to visit me and my boyfriend in Philly so we could all make the trek to Atlantic City for the Dave Matthews Band Caravan Concerts. Emily and I have been attending DMB shows together since high school; it was her 18th-20th and my 15th-17th. Concert weekend is only one of my most anticipated of the summer as it means time with my best friend, great music, and spontaneous jumping and dancing around. This time was no exception, we had a blast and the band played three great shows. Now my fingers are just crossed that at least one night becomes a CD.

Gallo Pinto

A few years ago I traveled to Costa Rica on a family vacation. The country is breathtakingly beautiful and the locals are the warmest and most welcoming people imaginable. Some of my dearest memories include feeding iguanas hibiscus flowers for breakfast, seeing monkeys running across paths instead of squirrels, swimming in beautifully-blue, warm water, and eating delicious food. My favorite meal during the trip was Gallo Pinto, a traditional Costa Rica dish meaning spotted rooster. I ate it nearly every morning with fried cheese, avocado, and guanábana juice, and when I came home, my Mom and I quickly adapted a recipe for our use. It's quick, easy, and delicious.

2 Bell peppers ideally one red and one yellow, chopped
1 Poblano pepper, chopped
1 Onion, chopped
Brown Rice
2 Cans black beans, rinsed
1 Cup Cilantro, chopped
1 Package Haloumi Cheese, sliced to your preference

1.  Cook brown rice following the instructions on the package but replace water with vegetable broth.
2.  In a separate frying pan, fry the cheese on medium-high heat, flipping only once.
3.  At the same time in a large frying pan cook onions and peppers with a little bit of olive oil until soft. Add beans and cook until warm.
4.  Add rice and cilantro and warm, allowing beans to darken and spot the rice.
5.  Serve with avocado, fried cheese, and Lizano sauce (an authentic Costa Rican must!)

Time For Business

This week I've embarked on my first ever business trip, a small explanation for my lack of post yesterday, and it couldn't be in a more exciting place - Vail. I've never been to Colorado before and have been truly blown away by the beauty of the mountain landscape. While work is keeping me quite busy, I'm getting a true appreciation for the area and taking lots of pictures (which of course I'll share at the end of the trip). Was your first business trip to somewhere exciting like Vail?

Layered Ruffles

I would describe my taste as ultra feminine, both in clothes and decor. It's something I'm working on it, as super feminine looks aren't always the most work appropriate apparel, and there's no way my boyfriend wants me decorating our new place in pinks and purples. However some days just call for an extra girly touch, yesterday being one. It was so gloomy that the day just needed to be brightened somehow - enter bright pink and lace.

Thursday's Threes

In order to regroup after a busy week and focus on the little things that I'm truly grateful for, Thursday posts will be dedicated to three things that are making me content, but to add a little spice, followed by three things that I'm currently coveting. No one's perfect, certainly not me, and life is truly all about balance, so why not remind myself of those things that make me happy and the things I would be happy to have.

I recently read an article about Blackbird Pizzeria, a vegan pizza shop in Philadelphia and being the born and raised vegetarian that I am, I felt compelled to try it. As it turns out, it was quite good, the sauce was tasty and not too sweet, the vegan cheese was remarkably cheese-like, and let's be honest, there's nothing like a guiltless guilty pleasure. And with options like the fungi with mushrooms, garlic, and a personal favorite, truffle oil, this pizzeria will certainly be added into the rotation.

Summertime and The Living is Easy

Oh hello first day of summer, I'm so glad you've finally arrived. 

While yes, of course, I realize that summer, in most senses of the word, has been in full swing for over a month now, there's something about it being official that makes it that much better. Summer has always been my favorite time of year because of the beautiful weather and laid back attitude it insists you adopt. This will be my first full summer in my new home of Philadelphia and I am intent to make the most of it. To solidify my summer plans, here’s a list of all the best of summer that I intend to enjoy - my summer to-do list, in all its glory.
  1. Attend an outdoor concert.
  2. Move into a new apartment with my boyfriend.
  3. Pack a picnic and head to the shore, Philadelphia style.
  4. Bike along the Schuylkill River Trail (a Philadelphia must).
  5. Perfect a summer cocktail.
  6. Go thrifting at a flea/antiques market.
  7. Pick blueberries and make jam with the extras.
  8. Learn to sail.
  9. Spend quality time with friends and family, preferably outside.
  10. Make a dent in my ever-growing reading list. Top of the pile: The Help and Cleopatra: A Life.
